homemade waffles

My husband is a big fan of waffles.  One day, when the waffle maker finally went on sale on slickdeals, he bought it hoping to make some delicious waffles.  Let’s just say his first attempt wasn’t too successful, so i decided to give it a try myself!

  • 1 3/4 cups of flour
  • 1 teaspoon of salt
  • 1 tablespoon of baking powder
  • 1/4 cup of corn starch
  • 2 tablespoon of sugar
  • 2 eggs
  • 1 1/2 teaspoon of pure vanilla extract
  • 1 3/4 cups of almond milk
  • 1/2 cup of avocado oil
  • blueberries
  • whipped cream
  • maple syrup

It was a huge success!  It’s an easy recipe.  You should give it a try! 😀

one of the more exotic dresses in my wardrobe, i’m loving its color and the way it flows. the low-back cutout is interesting and holds up well with the black elastic bands. it is a perfect dress for spring! I paired it with a large oversized black hat to complete the look.

location 1: the flower fields in carlsbad are open every spring between march 1st through may 10th. even though we went towards the very end of the season, there were still a ton of flowers in full bloom! it was so gorgeous!

location 2: capistrano beach in dana point. it’s a nice beach, very clean and empty. the best part is that parking is free! the walk down to the beach is fairly long, but if you are feeling lazy you could also take the gondola looking elevator on the side.

belize | adventure meets paradise (part 2)

[part 2: paradise]

from belize city, we took the water taxi (took about 1.hrs) to get to san pedro.  let me tell you, the water taxi was not a very pleasant experience.  the boat was super small and the wind was super strong.  just imagine sitting in front of a fan blasting at full power for 1.5hrs straight.  yeah..not the best.

we stayed at the phoenix in the central part of the island.  it’s a beautiful 5 star resort, conveniently located right next to all the restaurants and water activities.  anywhere we want to go was literally just 5-10min away.  oh and the best part was that there was a washer/dryer in our room!  coming from caves branch, we couldn’t wait to put all of our clothes into the washing machine!

[hol chan marine reserve] first time snorkeling and scuba diving!  we saw fish, sharks, and stingrays!  it’s a whole new world.

belize | adventure meets paradise (part 1)

belize is absolutely amazing!! this is a must go destination if you are looking for adventure and relaxation.  it has it all.  😀

[part 1: 4 adventures – 5 nights in ian anderson’s caves branch]

caves branch is located 12 miles south of belmopan, the capital city, on the hummingbird highway and can be reached in 3 accessible ways: driving (1.5hrs), bus, or private transfers.

adventure #1 [tikal – guatemala]

after a 3 hours car ride, we crossed the border, entered guatemala, and finally arrived at the magnificent mayan ruins- tikal.  it was absolutely breathtaking!

adventure #2 [waterfall]

after a short car ride, we geared up with a helmet, headlamp, and backpack as we walked into a completely dark cave filled with amazing mineral formations and waterfalls.  i was completed soaked from head to toe (so was everyone else).  it was such a thrill jumping into two waterfalls.

adventure #3 [sink hole]

after we hiked for 1.5hrs straight up to the top of the cliff, we repelled down 310 feet into the sink hole.  the hike was super strenuous, but the drop was so much fun!  this was definitely my favorite adventure!!

adventure #4 [ziplining]

we zipped through the jungle and the river.  this was by far the most relaxing adventure we’ve done.
